Vegan Popcorn – Four Ways

Ya'll like snacks? I know you do. I used to think that the only way popcorn should be eaten is with lots of butter and salt, but boy was I wrong! It's extremely versatile, and it turns out that trying new things isn't so bad after all. Today I'm going to share four different ways to make a super tasty popcorn snack. 

MOVIE THEATER CHEESY

Lets start with a classic. Which is buttery, cheesy, movie theater style popcorn. This is styled after those weird cheese powders for popcorn that I always thought sounded gross, but are probably good! This recipe is based off that idea and it's super good and very addicting. 

  • 1/4 cup popcorn kernels, popped in 2 tbsp coconut oil
  • 2 tbsp melted butter
  • 1 tbsp nutritional yeast
  • salt and pepper to taste

Heat popcorn kernels and coconut oil over medium heat until popping slows to about 5 seconds apart. Add 2tbsp melted butter, and immediately toss it in nutritional yeast, salt, and pepper.

Pumpkin Spice

This one is SO GOOD. I'm not even a fan of pumpkin spiced things. In fact, even while making this I was thinking, "Eh, I might not like this, but I know other people will." I was so wrong! This is my favorite recipe of this whole post. You gotta try it.

  • 1/4 cup popcorn kernels, popped in 2 tbsp coconut oil
  • 2 tbsp melted butter
  • 1 tbsp vegan sugar
  • 2 tsp pumpkin spice seasoning

Heat popcorn kernels and coconut oil over medium heat until popping slows to about 5 seconds apart. Melt butter, mix in sugar and pumpkin pie spiced until combined. Toss popped corn in butter mixture.

Chili-Spiced

I'm a huge fan of savory snacks, so this chili-spiced version is perfect. You've got a lot of flavor from the spices, but it's not too intense- just a nice flavorful snack.

  • 1/4 cup popcorn kernels, popped in 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin

Heat popcorn kernels and coconut oil over medium heat until popping slows to about 5 seconds apart. Add olive oil to popped corn. Toss in spices (chili powder, paprika, and cumin).

Chocolate Nut

I don't have to explain why this chocolate popcorn is so good! It's chocolate! An easy way to amp up your standard "popcorn-with-chocolate-thrown-in" is by making your own chocolate sauce. Here's a really quick way to get that good choco-drizzle. 

  • 1/4 cup popcorn kernels, popped in 2 tbsp coconut oil
  • 1 tbsp vegan butter
  • vegan m&ms
  • vegan chocolate chips
  • 2 tbsp coconut oil
  • 1 tbsp cocoa powder
  • 1 tbsp almond butter
  • 1 tbsp agave nectar
  • salt to taste

Heat popcorn kernels and coconut oil over medium heat until popping slows to about 5 seconds apart. Pour over butter and add salt to taste. Add chopped vegan m&ms and chocolate chips to popcorn. To make chocolate drizzle, combine coconut oil, cocoa powder, agave nectar and almond butter over low heat- mix well. Pour over the popcorn.
